The Road Ahead

Hi Jewels,

It’s Monica and as of today I am embarking on a new journey as I will pursue what I am naturally good at. I have officially resigned my position with corporate America. I know the road ahead will be bumpy, but I am confident and faithful that God will be with me every step of the way and I hope you will as well as I share my experiences that lie ahead.

Breakfast

Hey Jewels! Have you heard? Breakfast is the most important meal of the day! Here’s why:

  • It kick-starts your metabolism to help you burn more calories throughout the day.
  • Food is fuel. It gives you the energy to do your best throughout the day.
  • It’s delicious.

But who wants to wake up early to make breakfast. Not I! These make-ahead breakfast recipes from The Kitchn make it easy to have a little something in the morning to get your body going. A lot of them are grab-and-go so if you’re not hungry first thing in the morning, you can save it for later in the morning.

  • Yogurt Parfait- layer thick yogurt (plain Greek yogurt mixed with honey or maple syrup is a great option) with jams, fruit, or nut butter in a mason jar. Portion granola into a small plastic bag or plastic container to mix in later so it doesn’t get soggy. Make a few ahead of time and you can be a breakfast-eating queen throughout the week!
  • Ham and Cheese Breakfast Casserole- Challah, eggs, ham, and cheese. Oh my! This recipe is packed with protein and so easy to munch on the go.
  • Apricot Yogurt Scones For those sweet-teeth out there, this recipe is tangy and sweet and delicious.
  • Oatmeal in jars  More of an oatmeal kind of person? This recipe is great for making a bunch early in the week and portioning it into mason jars. Microwave it in the morning at home or take it with you to work.
